1. Preheat the oven.
Preheat oven to 300°F. Heat water until hot, not boiling; you’ll use this to create a water bath for the egg bites.
2. Make the cottage cheese mixture.
Add the cottage cheese (1 ¼ cup), cornstarch (1 tbsp), salt, and shredded cheese (1 cup) to a bowl or blender. Blend until smooth.
3. Add the eggs.
Add the 8 eggs and blend briefly, just until combined. Avoid overblending. An immersion blender works especially well here and makes cleanup easy.
4. Fill the muffin tin.
Grease a muffin tin well and divide the egg mixture evenly among the cups. Sprinkle in mix-ins.
